happy father's day.

for father's day i made this pie that turned out to be a total crowd pleaser. plus it's super easy and yummy:

chocolate hazelnut pie
(from southern living magazine)
makes 8 servings
prep 10 minutes
bake at 325 for 30 minutes

1 package (8 ounces) cream cheese, softened (i used low-fat)
1/2 cup hazelnut spread (such as nutella or the cheaper kroger brand)
1/2 cup sugar
1 egg
1/2 cup toasted hazelnuts, chopped
1 prepared chocolate cookie piecrust (such as oreo or the cheaper kroger brand)
1 cup heavy cream
1 teaspoon vanilla extract (we didn't have any so i didn't use it)

step #1 - heat oven to 325

step #2 - in a large bowl, combine cream cheese, hazelnut spread, and 1/4 cup sugar. beat on medium for 2 minutes or until well blended. add egg and 1/4 cup hazelnuts and beat until blended. pour into prepared piecrust.

step #3 - bake at 325 for about 20 minutes or until center is just set. remove pie from oven and cool completely on a wire rack.

step #4 - one pie has cooled, beat heavy cream, remaining 1/4 cup sugar and vanilla on high speed until medium peaks form. spread over pie and sprinkle with remaining 1/4 cup haxelnuts and mini chocolate chips.

that pie was delicious! and so easy! much better idea than the super-complicated cake i wanted to bake.
